I received a copy of a wonderful cookbook prepared by Shari Marsh. It is made up of recipes from the Marsh family. The book includes those from recipe cards, slips of paper and backs of church bulletins. Shari said her mother-in-law was an excellent cook and now we can enjoy some of her recipes, too.
Spaghetti pie
6 oz. spaghetti
2 TBS butter
½ C chopped green pepper
½ C diced onion
18 oz. can tomatoes
6 oz. can tomato paste
1 tsp. sugar
1 tsp. dried oregano
½ tsp. garlic salt
½ C shredded mozzarella cheese (2 oz.)
1/3 C grated Parmesan cheese
2 well-beaten eggs
1 C cottage cheese
1 lb. ground beef
Cook spaghetti according to package directions, drain. Stir butter into hot spaghetti, stir in Parmesan cheese and egg. Form spaghetti mixture into a crust in a buttered 10-in. pie plate. Spread cottage cheese over bottom of crust. In skillet, cook ground beef, onion, and green pepper until vegetables are tender and meat is browned. Drain off fat and stir in tomatoes, tomato paste, sugar, oregano and garlic salt and heat through. Pour meat mixture into crust. Bake uncovered in 350-degree oven for 20 minutes. Sprinkle mozzarella cheese on top and bake 5 minutes longer or until cheese melts. Serves 6.

Mom’s best potato soup
2 cans chicken broth
¾ C onion, diced
1 tsp. salt
8 oz. pkg. cream cheese, softened
4 C diced potatoes
5 slices of bacon, fried crisp and crumbed
Cook potatoes and onions in chicken broth for 30 minutes and then add cream cheese. Add crumbled bacon, salt and pepper.

Gerry Marshes chili
½ lb. bacon, chopped into bite-sized or smaller pieces
1 lb. lean ground beef
1 medium onion (or more), chopped or diced – your preference
1 can (16 oz.) stewed tomatoes, chopped up in bite-sized or smaller pieces
1 can (8 or 9 oz.) tomato sauce
2 TBS ketchup
2 cans of kidney beans – chili style/flavored
Fry bacon pieces until crispy and remove from pan. In bacon grease, brown ground beef and onions, remove from pan and drain grease out of pan. Place ground beef and onion back in pan and add tomato products including ketchup. Bring mixture to a boil, reduce heat and let simmer for 10 minutes. Add bacon pieces and beans and heat through. Shari’s note: You can top with shredded cheddar cheese and/or sour cream. Goes well with corn bread or tortilla chips.

Thought – Chocolate comes from coco, which is a tree. That makes it a plant. Great! Chocolate is a salad.
