Ham cheese rollups
1 tube refrigerated pizza dough
3/4 lb. ham very thinly sliced
8 oz. Swiss cheese very thinly sliced
8 tbsp. butter melted
2 tbsp. brown sugar
1 tbsp. Dijon mustard
2 tbsp. poppy seeds
cooking spray
1 tbsp. chopped parsley, optional
Preheat oven to 350 degrees. Coat a 9×13 pan with cooking spray. Unroll pizza dough onto a non-stick surface and roll it into a large rectangle, roughly 13×8 in size. Layer ham on top of pizza dough to cover it completely, then layer cheese in same fashion.
Starting at one of the long ends, tightly roll up dough, jelly roll style, pinching end to seal. Cut loaf crosswise into 12 equal-sized pieces, then arrange in prepared pan. Whisk together butter, brown sugar, Dijon mustard and poppy seeds, then pour evenly over rolls. Bake for 25-30 minutes or until golden brown. Sprinkle with parsley if desired, then serve.

Taco pizza
For crumbled ground beef:
1/2 lb. lean ground beef
1 tsp. chili powder
1/2 tsp. ground cumin
1/4 tsp. garlic powder
kosher salt and ground pepper
For mashed black beans:
15 oz. (can) black beans rinsed and drained
1/3 C jarred salsa
1/4 tsp. chili powder
1/4 tsp. ground cumin
Other ingredients for pizza:
1 lb. pizza dough
1 C shredded Monterey Jack cheese
1/2 C shredded sharp cheddar cheese
chopped lettuce, tomatoes, green onions, black olives, salsa, cilantro and plain Greek yogurt or sour cream
To make crumbled ground beef, in a large skillet over medium high heat add ground beef. Use a wooden spoon or spatula to break up beef into small crumbles. Season beef with the spices, salt and pepper. Cook beef until it is done then pour it onto paper towels if there is any excess grease.
To make mashed black beans, in a bowl mash together all ingredients with a potato masher until desired consistency is reached.
Preheat oven to 475 degrees. Stretch or roll pizza dough out onto a prepared pizza stone or baking sheet lined with parchment paper and sprinkled with cornmeal. Spread mashed black beans evenly on top of pizza dough. Sprinkle half of shredded cheese over beans. Top with crumbled ground beef and rest of shredded cheese. Bake pizza on middle rack of oven for 10-12 minutes or until crust is golden brown and cheese is melted and bubbly. Remove from oven and top with any or all of listed toppings.

Chunky monkey brownies
1 C unsalted butter, softened
2 eggs
1-1/2 C brown sugar
1/2 C sugar
1/4 tsp. salt
2 tsp. vanilla extract
2 C flour
1 banana, medium
2 C semi-sweet chocolate chips
1/4 C semi-sweet chocolate chips
In a mixing bowl, combine butter, eggs, brown sugar, white sugar, salt, and vanilla. Beat with an electric mixer until smooth. Add in flour and banana. Mix once more until all is combined. Fold in 2 cups of chocolate chips. Batter will be thick which is OK. Pour mixture into a greased 9×13 baking pan. Spread evenly. Sprinkle additional 1/4 cup chocolate chips on top of batter. Place pan in preheated oven at 350 for about 35-40 minutes or until toothpick comes out clean when inserted in center.
