Here are some really interesting snack foods. I hope you enjoy them, too.
Sweet potato wing dings
1 large sweet potato
1/4 C flour
1/4 tsp. sea salt
1/4 tsp. paprika
1/4 tsp. garlic powder
1 egg
deep fryer and oil
1/4 C Greek yogurt
1/4 C ketchup
Boil sweet potato for 15 minutes. Once it is cool enough, remove peel. Grate, mash or shred sweet potato, set aside. In a separate bowl, combine 1/4 cup flour, 1/4 cup sea salt, 1/4 teaspoon paprika and 1/4 teaspoon garlic powder. Put sweet potato mash into a large bowl, add one beaten egg, stir to combine, and then stir in flour mixture.
Prepare deep fryer, heat oil to 375 degrees. Drop 1-in. scoops of sweet potato batter into oil. Let them cook for three minutes. Remove fritters from oil and place on a plate lined with paper towels so oil can drain.
Sprinkle on sea salt to taste. For dipping sauce, stir together 1/4 cup ketchup and 1/4 cup Greek yogurt.

Edamame poppers
1-1/2 C cooked edamame
1/2 C flour
Cajun seasoning
2 eggs
1 C Panko breadcrumbs
1/2 C Parmesan cheese
1/3 C sour cream
1/4 tsp. wasabi sauce
Preheat oven to 400 degrees. In a large bowl, mix together 1-1/2 cups cooked edamame with 1/2 cup flour. Add Cajun seasoning to taste and mix ingredients. In a separate bowl, whisk together two eggs. In another bowl, mix together 1 cup Panko breadcrumbs and 1/2 cup Parmesan cheese. Take flour-coated edamame and add it to egg mixture, making sure each piece gets thoroughly coated.
Remove edamame from egg bowl and add it to bowl of breadcrumbs. Coat thoroughly. Lay out edamame poppers on a parchment paper covered baking pan. Bake for 12 minutes.
While baking, make wasabi dipping sauce. For sauce, mix together 1/3 cup sour cream and 1/4 teaspoon wasabi sauce into a small bowl. Remove edamame from oven and serve warm with dipping sauce.

Apple fries
1 can apple pie filling
2 piecrusts
eggs for egg wash
1/4 C sugar
1 tsp. cinnamon
1/4 tsp. nutmeg
sugar in the raw
Preheat oven to 350 degrees. In a food processor, pulse one can of apple pie filling until chunks are very small or totally smooth. Remove and set aside. On a floured surface, lay out one piecrust and spread apple mixture over surface evenly covering entire crust. Take second piecrust and place it on top of bottom crust and apple mixture.
With a pizza cutter, cut out fry shapes going vertically down the crust. Using a spatula, remove fries from floured surface and place on parchment paper covered baking sheet. Brush egg wash over fries.
In a separate bowl, combine 1/4 cup of sugar, 1 teaspoon cinnamon and 1/4 teaspoon nutmeg. Sprinkle sugar mixture over fries. Cover fries with a pinch of sugar in the raw to taste. Bake for 15 to 20 minutes. Remove from oven and serve with caramel, whipped cream or any desired toppings for dipping sauce.
