Football season is here. Try these recipes for your next game day party.
Warm ricotta dip
1 C ricotta cheese
2 garlic cloves, minced
2 TBS olive oil
1 TBS lemon juice
1 TBS rosemary, fresh, divided
salt/pepper to taste
1/2 C mozzarella cheese
1/4 C Parmesan cheese
baguette bread, sliced and toasted, for dipping
Preheat oven to 400 degrees. In a medium bowl, combine ricotta, garlic, olive oil, lemon juice, and 1/2 TBS of rosemary. Stir to combine and season with salt/pepper to taste.
In a 6-in. pan, spread mixture evenly. Sprinkle mozzarella and Parmesan on top. Place in oven and bake for 15 minutes. Turn oven to boil and cook an additional 5 minutes, or until top is golden brown. Remove from oven and sprinkle remaining rosemary on top.

Buffalo chick sticks
For 16 sticks:
8 oz. cream cheese, softened
2 C cooked and shredded chicken
½ C buffalo sauce
2 C shredded mozzarella cheese
1 C shredded cheddar cheese
1 oz. dry ranch dressing mix (1 packet)
2 C all-purpose flour
6 eggs, beaten
3 C seasoned breadcrumbs
peanut or vegetable oil, for frying
ranch dressing, for serving
Line an 8×8-in. baking dish with parchment paper. In a large bowl, combine cream cheese, chicken, hot sauce, cheeses, and ranch dressing mix with a fork until smooth and evenly mixed. Transfer to prepared baking dish and smooth it with a spatula so that it’s spread evenly in dish. Freeze until solid, at least 1 hour.
Working quickly, remove solid mixture from sheet and cut into 4×1-in. rectangles. (There should be 16 total.) Bread each stick by coating in flour, then dredging in egg, and then dipping in breadcrumbs. Dip once more in egg, then once more in breadcrumbs, and transfer to a baking dish.
Heat oil in a large pot until it reaches 375 degrees. Carefully lower 3 or 4 coated sticks into oil and fry for about 30 seconds, until golden brown. Continue this until all sticks are fried. Serve warm with ranch dressing.

Bailey’s mocha Frappucino
2 C ice cubes
1 C brewed coffee
1/2 C Bailey’s Irish Cream
1 C milk
1 TBS sugar
2 TBS chocolate fudge sauce
whipped cream/sprinkles
In a blender, combine ice cubes, coffee, Bailey›s, milk, sugar, and chocolate sauce. Blend until smooth and serve in mugs.
