Here are some suggestions for a special breakfast.
Sausage and red pepper frittata
3 mild Italian sausages
1 red pepper, chopped
1 onion, chopped
1 TBS butter
1 TBS fresh marjoram (1 tsp. dried marjoram)
8 eggs
1/2 C your favorite cheese, shredded
In a large bowl, whisk eggs, cheese and marjoram and set aside. Melt butter in a large skillet over medium heat. Add onions, red pepper and sausage (removed from casing and broken up into smaller pieces).
Cook for about 10 minutes or until sausage and veggies are softened. Add egg mixture to skillet and continue cooking on stove for 2 minutes. Move skillet to a 350-degree pre-heated oven and cook for 15 minutes.

Coffee cake
For cinnamon streusel crumb:
1-1/2 C flour
1/2 C brown sugar
1/4 C granulated sugar
1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
1/2 C butter – melted
1/2 tsp. vanilla
1 large (or 2 small) tart apples – peeled and chopped
For the cake:
4 TBS butter
1/2 C granulated sugar
1 large egg
1 tsp. vanilla
1/2 C sour cream
1 C flour
1/4 tsp. baking soda
1/4 tsp. salt
1/2 tsp. baking powder
For apple cider glaze:
1/2 C powdered sugar
1 1/2 TBS apple cider
Preheat oven to 350 degrees. Grease 8-in. springform pan and line bottom with parchment paper; set aside. To make cinnamon streusel crumb in a bowl, whisk together dry ingredient. Add melted butter and vanilla and stir until mixture is evenly moist; set aside.
To make cake in a large bowl, cream together 4 TBS butter with 1/2 cup sugar until light and fluffy. Add egg and beat well, then add vanilla and sour cream and beat again.
In another bowl, stir together 1 cup flour, baking soda, salt, and baking powder, and add to butter mixture. Stir until just combined. Spread half of batter at bottom of pan (it will be a very thin layer). Spread apple chunks evenly over batter, then sprinkle about 1 cup of cinnamon streusel crumbs over apples. Spread remaining batter over crumbs and on top spread rest of cinnamon streusel. Bake 35-40 minutes or until a tester inserted in the center comes out clean. Before removing ring of springform pan, run a thin knife around cake.
To make glaze, whisk together powdered sugar with apple cider and drizzle over cake.

Cinnamon bun cake
Base:
3 C flour
1/4 tsp. salt
1 C sugar
4 tsp. baking powder
1-1/2 C milk
2 eggs
2 tsp. vanilla
1/2 C butter, melted
Topping:
1 C butter, softened
1 C brown sugar
2 TBS flour
1 TBS cinnamon
Glaze:
2 C icing sugar
5 TBS milk
1 tsp. vanilla
Preheat oven to 350 degrees. Prepare a 9×13 baking pan (buttered). Mix all base ingredients together, with except of butter. Add melted butter last, and then pour into prepared pan. Mix all topping ingredients together in a separate bowl. Mix well. Drop by teaspoonful over base, as evenly as you can over entire base. Take a butter knife and swirl topping into base. Pop into oven and bake for 28-30 minutes. While cake is baking, prepare glaze and set aside. Remove from oven and glaze cake while still warm.
